Cooking food over glowing coals is one of the real pleasures of summer. The delicious smells enveloping the patio and the glowing embers lighting up the hours of dusk turn barbecuing into something special.

One of the advantages of barbecuing is the slow start. The ritual of preparing and lighting the grill turns cooking into an activity which cannot possibly be hurried. It takes the time it takes.

While cooking, the food must be continuously attended to. With direct and intense radiant heat, the difference between success and failure can be a matter of seconds. It is a challenge, but all the attention pays off.
