Organic Broccoli 1 Head
Fresh Laurel Leaves 3 ea
Butter 2 Tbs.
Water 1 Cup
Salt ΒΌ Tsp
Pepper 1/8 Tsp
Procedure
1) Choose a nice round head of broccoli without much stem. Rinse the broccoli thoroughly and trim the stem. Hollow out the thick bottom stem with a sharp paring knife.
2) Place the water, laurel, butter and seasonings in a stainless or copper pan that is just larger than the head of broccoli. Put the broccoli in the pan, bring to the boil, cover and steam until tender (about 10 minutes).
3) Remove the broccoli from the pan and place in on the platter in which you will be serving it on. Keep warm.
4) Boil the steaming liquid until it emulsifies and thickens. If most of the liquid has evaporated out during the cooking process, add a little more water to the pan and boil to make the sauce.
5) Pour the sauce over the broccoli and serve.
